I'm confused, after I unroot my phone and install the new pie update. In the context of rooting after updating to pie, would I have to back up the stock rom again/download or just flash the patched boot.img of the previous android oreo?

You'll need to back up and patch the pie's boot.img.

you need to patch boot.img from the current boot.img on the device not the previous one
so either backup / download stock rom
